Abstract: This paper discusses the classification of Chilean wines by geographical origin based only on aroma information. The varieties of Cabernet Sauvignon, Merlot, and Carménère analyzed here are produced in four different valleys in the central part of Chile (Colchagua, Maipo, Maule, and Rapel). Aroma information was obtained with a zNoseTM (fast gas chromatograph) and the data was analyzed by applying wavelet transform for feature extraction followed by an analysis with support vector machines for classification. Two evaluations of the classification technique were performed; the average percentage of correct classification performed on the validation set was obtained by means of cross-validation against the percentage of correct classification obtained on the test set. This developed technique obtained results on classification rates over 94% in both cases. The geographical origin of a Chilean wine can be resolved rapidly with fast gas chromatography and data processing.
